For a lactose-free option, feel free to swap in coconut milk. Give this easy and delicious treat a try; you won’t be disappointed!

Ingredients

  • 500 ml milk
  • 50 g cornstarch
  • 50 g sugar
  • 1 cup coconut shreds

Instructions

  1. In a non-stick pot, combine half of the milk with the sugar, mixing until well blended.
  2. In a separate bowl, mix the remaining milk with the cornstarch until fully combined.
  3. Place the pot with the sugar and milk over medium-low heat. Cook for 3-4 minutes, heating the mixture without letting it simmer.
  4. Gradually pour the cornstarch mixture into the pot while stirring continuously. Keep stirring until the pudding thickens, about 4 minutes. The ideal consistency is thick enough to slowly drip off a spatula.
  5. Line a container with parchment paper and pour in the mixture. Let it cool for 1-2 hours until fully set.
  6. Cut into bite-sized pieces, coat with shredded coconut, and enjoy!
