  • 3 ripe bananas
  • 2 eggs

  • 70 grams (⅓ cup) granular sweetener (erythritol or coconut sugar)
  • 1 tsp vanilla extract
  • ⅙ tsp sea salt
  • 150 grams (1 ½ cups) oat flour (or whole wheat flour or all-purpose flour)
  • 50 grams (½ cup) cocoa powder
  • 2 tsp baking powder
  • 50 grams (½ cup) chocolate chips

Instructions

  1. Preheat the Oven: Preheat your oven to 180°C (350°F). Line a 20 cm (7.9 inches) loaf pan with parchment paper or grease it lightly with oil.
  2. Prepare the Bananas: In a large mixing bowl, mash the three ripe bananas with a fork until smooth.
  3. Mix Wet Ingredients: Stir the nut butter and eggs into the mashed bananas until well combined.
  4. Add Sweeteners and Flavoring: Add your choice of granular sweetener (or coconut sugar), vanilla extract, and sea salt to the mixture. Whisk or stir for about two minutes until everything is nicely combined.
  5. Incorporate Dry Ingredients: Gradually add the oat flour (or your preferred flour), cocoa powder, and baking powder. Mix well until fully incorporated, then gently fold in the chocolate chips.
  6. Bake the Bread: Pour the batter into the prepared loaf pan. If desired, sprinkle additional chocolate chips on top. Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
