Homemade Cronuts

Ingredients:

  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 teaspoon salt
  • ½ cup cold unsalted butter, cubed
  • ½ cup warm milk
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups vegetable oil (for frying)
  • ½ cup sugar (for coating)

For the Filling:

  • 1 cup pastry cream or whipped cream
  • 1 tablespoon vanilla extract

Directions:

  1. Activate Yeast:
    Dissolve the yeast in warm milk and let it sit for 5 minutes until foamy.
  2. Make Dough:
    Combine flour, sugar, and salt in a bowl. Cut in the cold butter using a pastry cutter until the mixture looks like coarse crumbs.
  3. Mix & Knead:
    Add the yeast mixture, egg, and vanilla to the flour. Mix until soft dough forms. Knead on a floured surface for 5-7 minutes until smooth.
  4. Chill the Dough:
    Wrap the dough in plastic wrap and refrigerate for 1 hour to firm up.
  5. Roll & Fold:
    Roll out the dough, fold like a letter, and repeat 3 times for layers.
  6. Cut & Rise:
    Cut into doughnut shapes, cover, and let them rise for 30 minutes.
  7. Fry the Cronuts:
    Heat oil to 350°F (175°C) and fry in batches for 2-3 minutes per side. Drain on paper towels.
  8. Coat & Fill:
    Roll warm cronuts in sugar and fill with pastry cream or whipped cream using a piping bag.
  9. Enjoy:
    Serve warm and enjoy these flaky, delicious cronuts!
