  • 18-24 large strawberries
  • 1 cup heavy whipping cream
  • 1 (8 oz) package of cream cheese (softened)
  • 1/3 cup sour cream
  • 2/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice (optional)
  • 1/2 cup graham cracker crumbs

Instructions:

  1. Prep the Strawberries: Start by cutting off the stems and slicing the strawberries in half. To ensure they stand upright, trim a small sliver off the back of each half. Use a melon baller to carefully hollow out a small indent in the center (just enough to hold the filling).
  2. Whip the Cream: In a medium bowl, beat the heavy whipping cream until stiff peaks form (around 5 minutes).
  3. Mix the Filling: In a separate bowl, blend the softened cream cheese, sour cream, sugar, vanilla extract, and optional lemon juice with an electric mixer until smooth and creamy.
  4. Combine: Gently fold the whipped cream into the cream cheese mixture until everything is well combined.
  5. Assemble: Transfer the cream cheese mixture to a piping bag fitted with a star tip. Pipe the filling onto each prepared strawberry half.
  6. Finish: Sprinkle with graham cracker crumbs for a delicious cheesecake-like touch.
  7. Serve: Enjoy immediately or chill until ready to serve!
