Low Calorie Banana Bread

If you’re on a diet but craving something sweet, this Low Calorie Banana Bread is perfect for you! Moist, delicious, and a healthier alternative to the original, this skinny banana bread is low in fat, calories, and sugar.

Ingredients

  • 1 egg
  • 1 egg white (or 2 whole eggs)
  • 2 very ripe bananas
  • 45g (3 tbsp) maple syrup or honey
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ⅙ tsp salt
  • 180g (1 ¾ cups) oat flour (or preferred flour)
  • 15-45ml (1-3 tbsp) milk of choice
  • 1 ½ tsp baking powder

Instructions

  1. Preheat your oven to 180°C (350°F) and line a 20 cm (7.9 inches) loaf pan with parchment paper or grease it with oil.
  2. In a large mixing bowl, mash the bananas until smooth, then mix in the egg, egg white, maple syrup, vanilla extract, cinnamon, and salt. Stir until smooth.
  3. Gradually add in the oat flour and baking powder, stirring as you go. Slowly pour in the milk, starting with 1 tbsp and adding more until the batter reaches the right consistency.
  4. Pour the batter into the prepared loaf pan and bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  5. Let the banana bread cool in the pan for 15 minutes before transferring to a rack to cool completely.
