Ingredients
- 1 egg
- 1 egg white (or 2 whole eggs)
- 2 very ripe bananas
- 45g (3 tbsp) maple syrup or honey
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- ⅙ tsp salt
- 180g (1 ¾ cups) oat flour (or preferred flour)
- 15-45ml (1-3 tbsp) milk of choice
- 1 ½ tsp baking powder
Instructions
- Preheat your oven to 180°C (350°F) and line a 20 cm (7.9 inches) loaf pan with parchment paper or grease it with oil.
- In a large mixing bowl, mash the bananas until smooth, then mix in the egg, egg white, maple syrup, vanilla extract, cinnamon, and salt. Stir until smooth.
- Gradually add in the oat flour and baking powder, stirring as you go. Slowly pour in the milk, starting with 1 tbsp and adding more until the batter reaches the right consistency.
- Pour the batter into the prepared loaf pan and bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool in the pan for 15 minutes before transferring to a rack to cool completely.
