Ingredients:
- 5 large russet potatoes, washed and dried
- 1/3 cup vegetable oil
- 5 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1 tablespoon cornstarch
- 2 teaspoons black pepper
- 1 1/2 teaspoons kosher salt
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1/4 cup minced fresh cilantro
Instructions:
Prepare the Potatoes:
- Slice each potato in half lengthwise, then cut each half into 4 evenly sized wedges. Repeat for all potatoes.
- Preheat your oven to 400°F and line several baking sheets with parchment paper.
Season the Potatoes:
- In a large mixing bowl, combine the potato wedges, vegetable oil, and garlic. Stir well.
- Add the Parmesan, cornstarch, black pepper, salt, onion powder, paprika, chili powder, and cilantro. Mix thoroughly, using your hands to ensure the seasonings evenly coat the potatoes.
Bake the Wedges:
- Arrange the seasoned potato wedges on the prepared baking sheets. Make sure they are spread out, leaving space between each wedge. For the best results, place the wedges skin-side down with the point facing upwards.
- Bake for 15 minutes at 400°F, then lower the temperature to 375°F and bake for an additional 40 minutes, or until the wedges are crispy and golden brown to your liking.
