Instructions:

Prepare the Potatoes:

  1. Slice each potato in half lengthwise, then cut each half into 4 evenly sized wedges. Repeat for all potatoes.
  2. Preheat your oven to 400°F and line several baking sheets with parchment paper.

Season the Potatoes:

  1. In a large mixing bowl, combine the potato wedges, vegetable oil, and garlic. Stir well.
  2. Add the Parmesan, cornstarch, black pepper, salt, onion powder, paprika, chili powder, and cilantro. Mix thoroughly, using your hands to ensure the seasonings evenly coat the potatoes.

Bake the Wedges:

  1. Arrange the seasoned potato wedges on the prepared baking sheets. Make sure they are spread out, leaving space between each wedge. For the best results, place the wedges skin-side down with the point facing upwards.
  2. Bake for 15 minutes at 400°F, then lower the temperature to 375°F and bake for an additional 40 minutes, or until the wedges are crispy and golden brown to your liking.

Serve:
Enjoy these crispy potato wedges hot, served with your favorite dipping sauce!
