The scent of earthy, roasted vegetables mingling with a sharp-yet-sweet glaze is enough to make anyone stop in their tracks. These Maple Mustard Roasted Carrots transform a simple pantry staple into a vibrant, festive side dish that looks just as good as it tastes.

Ingredients

  • 1.5 lbs whole carrots stems trimmed to 1 inch
  • 2 tbsp pure maple syrup
  • 1 tbsp stone-ground or grainy mustard
  • 2 tbsp avocado or olive oil
  • ½ tsp kosher salt
  • ¼ tsp coarsely ground black pepper
  • 1 tsp fresh thyme leaves for garnish

Instructions

  • Preheat your oven to 400°F (204°C).
  • In a small bowl, whisk together the maple syrup, mustard, oil, salt, and pepper.
  • Place the cleaned carrots on a large baking sheet. Pour ¾ of the glaze over the carrots and toss until well-coated.
  • Roast for 15 minutes, then use tongs to flip the carrots over.
  • Brush the remaining glaze over the carrots and roast for another 8–10 minutes, or until the carrots are tender and the glaze is bubbling and dark.
  • Transfer to a serving platter and sprinkle with fresh thyme leaves before serving.
