Ingredients

  • 1 lb bacon diced
  • 1 medium sweet onion chopped
  • 9 large eggs lightly beaten
  • 4 cups frozen hash browns thawed
  • 2 cups shredded cheddar cheese
  • cups small curd cottage cheese
  • cups shredded Swiss cheese

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.

Step 2: Cook the Bacon and Onion

  • In a large skillet over medium-high heat, cook the diced bacon and chopped onion together for about 10 minutes, or until the bacon is crispy.
  • Drain off excess grease and let cool slightly.

Step 3: Mix the Casserole

  • In a large mixing bowl, combine the cooked bacon and onion mixture with beaten eggs, thawed hash browns, shredded cheddar, Swiss cheese, and cottage cheese.
  • Stir until everything is evenly incorporated.

Step 4: Bake

  • Pour the mixture into the prepared baking dish and spread it out evenly.
  • Bake for 45–50 minutes, or until the eggs are set and the cheese is bubbly and golden.

Step 5: Rest and Serve

  • Allow the casserole to rest for 10 minutes before slicing.
  • Serve warm and enjoy every cheesy, savory bite.
