Bacon Cheeseburger Bombs: a fun, bite-sized appetizer filled with seasoned beef, crispy bacon, and melted cheddar wrapped in golden biscuit dough. Perfect for parties, snacks, or game day!

Ingredients

  • 1 lb ground beef
  • 6 slices bacon cooked and crumbled
  • 1 small onion finely diced
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 can 16 oz refrigerated biscuit dough
  • 2 tablespoons butter melted
  • 1 teaspoon sesame seeds optional
  • Pickle slices for serving optional
  • Ketchup and mustard for dipping

Instructions

Prepare the Beef Mixture:

  • In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked.
  • Season with salt and pepper. Drain excess grease, then stir in crumbled bacon and shredded cheddar cheese.
  • Set aside to cool slightly.

Assemble the Cheeseburger Bombs:

  • Preheat oven to 375°F (190°C).
  • Separate biscuit dough into individual rounds and flatten each slightly.
  • Add 1–2 tablespoons of the beef mixture to the center of each biscuit.
  • Fold dough around the filling and pinch tightly to seal, forming a ball.

Bake:

  • Place each sealed dough ball seam-side down on a parchment-lined baking sheet.
  • Brush with melted butter and sprinkle with sesame seeds if desired.

Cook Until Golden:

  • Bake for 12–15 minutes or until golden brown and fully cooked through.

Serve:

  • Serve warm with ketchup, mustard, and pickle slices on the side for dipping.

Notes

Add extra flavor with a splash of Worcestershire sauce or garlic powder.
Swap cheddar for Swiss, pepper jack, or American cheese.
For extra melty centers, tuck a small cheese cube inside each bomb.
