Ingredients

Chicken Bites

  • 2 chicken breasts boneless and skinless, cut into 1-inch cubes
  • ½ teaspoon salt or to taste
  • 1 teaspoon black pepper or to taste

Bacon

  • 12 slices thin-cut bacon cut into halves or thirds

Coating

  • ¾ cup dark brown sugar packed

Garnish

  • 1 tablespoon fresh parsley chopped (optional)

Instructions

Prep the Baking Sheet

  • Preheat oven to 350°F (175°C). Line a baking sheet with aluminum foil for easy cleanup. Set a wire cooling rack on top.

Season the Chicken

  • Season the chicken cubes with salt and pepper.

Wrap with Bacon

  • Cut bacon slices in half or thirds depending on thickness. Wrap one piece tightly around each chicken cube. No toothpicks needed—bacon adheres as it cooks.

Coat in Brown Sugar

  • Add the packed dark brown sugar to a shallow dish. Roll each bacon-wrapped chicken piece thoroughly in the sugar to coat all sides.

Arrange and Bake

  • Place chicken on the wire rack. Sprinkle lightly with additional salt and pepper if desired.
  • Bake for 30–45 minutes, checking at the 30-minute mark.
  • Chicken is done when internal temperature reaches 165°F (74°C) and bacon is crisp.
