Ingredients

For the Baked Sardines

  • 1 lb fresh wild sardines cleaned
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 3 garlic cloves minced
  • ¼ cup fresh parsley or dill chopped
  • ½ cup panko breadcrumbs
  • Salt and black pepper to taste

Instructions

Prep the Oven

  • Preheat your oven to 400°F (200°C). Lightly grease a baking dish with nonstick spray or a drizzle of olive oil.

Prepare the Sardines

  • Rinse sardines under cold water and pat completely dry using paper towels.

Make the Marinade

  • In a bowl, combine:
  • olive oil
  • lemon juice
  • minced garlic
  • salt
  • black pepper
  • Toss the sardines in the mixture to coat thoroughly.

Assemble

  • Place sardines in a single layer in the baking dish. Sprinkle evenly with panko breadcrumbs and fresh herbs.

Bake

  • Bake for 15–20 minutes, or until the sardines are crisp, lightly golden, and sizzling at the edges.

Serve

  • Drizzle any leftover pan juices over the sardines and enjoy immediately.

Notes

Extra crispiness: Broil for the last 1–2 minutes—watch closely.
Fresh herbs: Dill adds brightness, while parsley adds earthiness.
Buy cleaned sardines: Ask your fishmonger to clean and gut them for easier prep.
Add spice: A pinch of smoked paprika or chili flakes adds heat and depth.
