Ingredients

  • 1 cup unsalted butter softened
  • 8 oz cream cheese softened
  • ¾ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 2 cups all-purpose flour

  • 2 cups fresh blueberries tossed in 1 tablespoon flour

Instructions

Step 1: Preheat and Prepare

  • Preheat your oven to 350°F (175°C). Grease two 9×5-inch loaf pans and set aside.

Step 2: Cream the Base

  • In a large mixing bowl, cream together the softened butter, cream cheese, and sugar until light and fluffy.

Step 3: Add Eggs and Vanilla

  • Beat in the eggs one at a time, followed by the vanilla extract.

Step 4: Combine Dry Ingredients

  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture into the wet batter, mixing just until incorporated.

Step 5: Fold in Blueberries

  • Toss the blueberries with 1 tablespoon flour (to prevent sinking), then gently fold them into the batter.

Step 6: Fill and Bake

  • Divide the thick batter evenly between the two prepared loaf pans.
