Ingredients

  • 2 cups water
  • 2 cups uncooked rice
  • 1 10 oz can cream of chicken soup
  • 1 10 oz can cream of mushroom soup
  • 2 cups cooked chicken shredded
  • ¼ cup butter
  • 1 cup milk
  • 1 small white onion finely chopped
  • 16 ounces broccoli florets fresh or frozen
  • 2 cups shredded Cheddar cheese

Instructions

Step 1: Preheat the Oven

  • Set your oven to 350°F (175°C) to get it ready for baking.

Step 2: Cook the Rice

  • Prepare the rice according to package directions. Set aside once cooked.

Step 3: Mix the Base

  • In a large 9x13-inch baking dish, combine the cooked rice, shredded chicken, cream of chicken soup, cream of mushroom soup, butter, milk, chopped onion, and broccoli. Stir everything together until it’s fully combined.

Step 4: Add Cheese

  • Stir in 1 cup of shredded cheddar cheese to give the casserole a creamy, cheesy base.

Step 5: Bake

  • Place the dish in the oven and bake uncovered for 30 to 35 minutes, or until bubbling and hot.

Step 6: Top & Finish

  • Sprinkle the remaining 1 cup of cheddar cheese over the top in the last 5 minutes of baking. Let it melt until bubbly and golden.

Step 7: Rest & Serve

  • Remove from the oven and let the casserole sit for 5 minutes before serving. This helps everything set for perfect portions.
