Ingredients

Caramelized Onion Aioli:

  • 2 tbsp olive oil
  • ½ large yellow onion finely diced
  • tsp brown sugar
  • ¼ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 1 tsp apple cider vinegar
  • ½ tsp garlic powder
  • Salt and pepper to taste

Burger Patties:

  • 1 lb ground beef 80–85% lean
  • Kosher salt and freshly ground black pepper

For Serving:

  • Roasted potatoes or French fries homemade or frozen
  • Romaine lettuce chopped
  • Fresh tomatoes sliced

Instructions

Step 1: Make the Caramelized Onion Aioli

  • Heat olive oil in a skillet over medium heat.
  • Add the diced onion and a pinch of salt. Cook for 10 minutes, stirring occasionally, until softened.
  • Stir in the brown sugar and continue cooking for another 5–10 minutes, until the onions are deep golden and jammy. Add a splash of water if they begin to brown too quickly.
  • Transfer to a bowl and mix in the mayo, Greek yogurt, apple cider vinegar, and garlic powder. Season with salt and pepper to taste. Chill while prepping the rest.

Step 2: Cook the Burger Patties

  • Divide the ground beef into 4–6 equal portions and shape into patties.
  • Season both sides generously with salt and pepper.
  • Wipe out the skillet used for the onions and heat over medium-high.
  • Sear the patties for 2–3 minutes per side or until cooked to your desired doneness.

Optional: Add cheese in the last minute of cooking if you like melted goodness on top!

    Step 3: Assemble the Burger Bowls

    • Layer chopped romaine lettuce into bowls.
    • Add sliced tomatoes and a handful of fries or roasted potatoes.
    • Place one patty on each bowl.
    • Spoon over a generous dollop of the caramelized onion aioli.
    • Garnish with extra aioli, a drizzle of hot sauce, or a sprinkle of fresh herbs if you like.
