When you're craving the decadent flavors of a classic cheesecake but want something with a warm, seasonal flair, these Cheesecake Stuffed Baked Apples are a total game-changer. There is something truly magical about the way a tart, crisp apple softens in the oven, creating a natural bowl for a velvety, cream cheese filling.

Ingredients

  • 4 large tart apples Honeycrisp or Granny Smith
  • 8 oz cream cheese softened
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ½ cup graham cracker crumbs
  • 2 tbsp melted butter

Instructions

  • Preheat your oven to 375°F.
  • Carefully scoop out the center of each apple, creating a bowl with at least a ½-inch wall. Do not pierce the bottom.
  • In a medium bowl, beat the softened cream cheese and sugar until smooth. Add the egg, vanilla, and a pinch of cinnamon, mixing until just combined.
  • Spoon the cheesecake mixture into the hollowed-out apples.
  • Place apples in a baking dish and pour ½ cup of water into the bottom of the dish.
  • Bake for 25 minutes.
  • Meanwhile, mix graham cracker crumbs with melted butter and the remaining cinnamon.
  • Sprinkle the crumble on top of the apples and bake for an additional 5–8 minutes until the apples are tender and the topping is golden.
  • Let cool for 10 minutes before serving.
