There is nothing quite like a vibrant, festive Christmas Salad to brighten up your holiday table. This dish brings a much-needed pop of color and a burst of freshness to balance out the heavier roasts and casseroles typical of the season.

Ingredients

  • 5 cups mixed arugula and baby spinach
  • 2 mandarin oranges peeled and segmented
  • ½ cup pomegranate seeds
  • ½ cup candied pecans
  • cup crumbled goat cheese
  • Optional: ¼ cup red onion thinly sliced
  • Dressing: Balsamic vinaigrette or citrus vinaigrette

Instructions

  • In a large, shallow serving bowl, toss the arugula and spinach together.
  • Add the mandarin orange segments and pomegranate seeds.
  • Scatter the candied pecans and crumbled goat cheese over the top.
  • If using, add the thinly sliced red onion for a bit of extra bite.
  • Drizzle with your choice of dressing just before serving.
  • Toss very gently to combine and serve immediately.
