The aroma of fresh garlic and buttery herbs hitting a hot pan is the ultimate invitation to the kitchen, promising a meal that is both rustic and incredibly satisfying.

Ingredients

  • 1.5 lbs chicken breasts cut into thin strips
  • 1 lb baby potatoes cut into small wedges
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp fresh rosemary finely chopped
  • 1 tsp fresh thyme
  • ½ tsp red pepper flakes optional
  • Salt and black pepper to taste
  • ¼ cup fresh parsley chopped

Instructions

  • In a large skillet, heat olive oil over medium-high heat. Add the potato wedges and cook for 10–12 minutes, stirring occasionally, until golden and tender. Remove and set aside.
  • In the same skillet, add the chicken strips. Season with salt and pepper and sear for 5–7 minutes until golden-brown and cooked through.
  • Reduce heat to medium. Return the potatoes to the skillet.
  • Add the butter, minced garlic, rosemary, thyme, and red pepper flakes.
  • Toss well for 2–3 minutes until the butter is melted and everything is coated in a fragrant glaze.
  • Remove from heat, garnish with fresh parsley, and serve immediately.
