This Healthy Winter Salad is a refreshing burst of color and flavor during the colder months when hearty, heavy meals tend to dominate the menu. There is something incredibly revitalizing about the combination of crisp seasonal greens, juicy mandarin segments, and the bright pop of pomegranate seeds.

Ingredients

  • 6 cups mixed winter greens spinach, arugula, or kale
  • 3 mandarin oranges peeled and segmented
  • ½ cup pomegranate seeds
  • ½ cup pecans roughly chopped
  • cup crumbled feta or goat cheese
  • Optional Dressing: 3 tbsp olive oil 1 tbsp balsamic vinegar, 1 tsp honey, salt and pepper to taste

Instructions

  • Place the mixed greens in a large serving bowl.
  • Evenly distribute the mandarin segments and pomegranate seeds over the greens.
  • Sprinkle the chopped pecans and crumbled cheese on top.
  • In a small jar, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper.
  • Just before serving, drizzle the dressing over the salad and toss gently to combine.
