A hearty Colorado green chili made with pork and Hatch green chiles—slow-cooked and packed with bold Southwestern flavor.

Ingredients

  • 2 lbs pork shoulder cut into 1-inch cubes
  • 1 large onion diced
  • 4 cups chicken broth
  • 2 cups roasted Hatch green chiles peeled and chopped
  • 4 garlic cloves minced
  • Salt and pepper to taste

Instructions

Step 1: Sear for Flavor

  • In a hot skillet, brown the pork cubes over medium heat until each side is caramelized. This step locks in flavor and adds depth to your chili.

Step 2: Load the Crock Pot

  • Transfer the browned pork to your Crock Pot.
  • Add diced onions, chicken broth, chopped Hatch green chiles, garlic, salt, and pepper.
  • Stir everything together to combine the ingredients evenly.

Step 3: Slow Cook to Perfection

  • Set your Crock Pot to low and cook for 6 hours.
  • When done, the pork should be meltingly tender, and the green chile base thickened and aromatic.
