Ingredients

Chocolate Cookie Crust

  • 2 cups 320 g crushed chocolate sandwich cookies
  • ¼ cup 56 g butter, melted

Cookies and Cream Filling

  • 8 oz 227 g cream cheese, room temperature
  • ¾ cup 150 g granulated sugar
  • 2 tsp vanilla extract
  • 1 ½ cups 357 g heavy cream
  • ½ cup 80 g crushed chocolate sandwich cookies

Garnish

  • 28 mini chocolate sandwich cookies

Instructions

Step 1: Make the Cookie Crust

  • In a small bowl, mix the crushed chocolate sandwich cookies with the melted butter until well combined.

Step 2: Portion the Crust

  • Spoon the mixture into 28 two-ounce dessert cups. Use the bottom of another cup or spoon to press the crumbs firmly into the base of each cup.

Step 3: Prepare the Cream Filling

  • In a mixing bowl, beat the cream cheese and sugar with an electric mixer on medium speed until smooth and creamy. Add the vanilla extract and heavy cream, then whip on medium-high speed until the mixture becomes light, fluffy, and holds soft peaks.

Step 4: Fold in Cookie Crumbs

  • Gently fold in the crushed cookies to add texture and that signature cookies-and-cream flavor.

Step 5: Assemble the Dessert Cups

  • Transfer the filling to a piping bag and pipe into each dessert cup until about three-quarters full.

Step 6: Garnish and Chill

  • Top each dessert cup with a mini cookie or extra cookie crumbs. Cover with lids and refrigerate
