Ingredients

For the Chicken

  • 2 boneless skinless chicken breasts (cut in half horizontally to make 4 steaks)
  • 1 tsp salt
  • ¼ tsp cracked black pepper
  • 1 tsp sweet paprika
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • ¼ cup 35 g all-purpose flour
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter

For the Sauce

  • 1 tbsp unsalted butter
  • 1 tbsp freshly minced garlic
  • ½ cup 125 ml chicken stock
  • 300 ml 10 fl oz heavy cream (double cream)
  • 1 tsp Dijon mustard
  • ½ cup 50 g grated parmesan
  • Salt and black pepper to taste

To Serve

  • Mashed potatoes steamed rice, or pasta
  • Steamed greens
  • 1 tbsp finely chopped parsley
  • Lemon wedges

Instructions

Step 1: Season and Coat the Chicken

  • Sprinkle the chicken steaks with salt, black pepper, paprika, onion powder, and thyme. Press each piece into the flour so that all sides are evenly coated.

Step 2: Sear the Chicken

  • Heat the olive oil and 1 tablespoon butter in a large skillet over medium–high heat. Add the chicken and cook for 5–6 minutes total, turning halfway through, until golden and just cooked through. Remove and set aside on a plate.

Step 3: Build the Garlic Sauce

  • In the same pan, melt the additional 1 tablespoon butter. Add the garlic and sauté for 30 seconds until fragrant. Pour in the chicken stock and let it simmer for 1–2 minutes until reduced by half.

Step 4: Add Cream and Flavor

  • Stir in the cream and Dijon mustard. Reduce heat to medium and simmer for 2 minutes, letting the sauce thicken slightly. Add parmesan cheese, stirring until melted into the sauce. Season to taste.

Step 5: Finish the Dish

  • Return the chicken to the skillet and simmer in the sauce for 2–3 minutes until heated through. Spoon sauce over the chicken, then garnish with chopped parsley and a squeeze of lemon juice before serving.

Step 6: Serve and Enjoy

  • Serve with mashed potatoes, rice, or pasta alongside steamed greens for a complete meal.
