Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • ¼ cup extra virgin olive oil
  • ¼ cup fresh cilantro finely chopped
  • 2 limes zested and juiced
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  • In a large bowl or resealable bag, combine olive oil, cilantro, lime juice, lime zest, garlic, cumin, paprika, salt, and pepper.
  • Add the chicken thighs to the marinade and toss to coat thoroughly. Marinate for at least 30 minutes (up to 4 hours).
  • Heat a large cast iron skillet over medium-high heat with a drizzle of oil.
  • Once the pan is hot, add the chicken thighs in a single layer. Cook for 5–7 minutes without moving them to develop a crust.
  • Flip the chicken and cook for another 5–6 minutes, or until the internal temperature reaches 165°F.
  • Remove from the pan and let rest for 5 minutes.
  • Garnish with extra fresh cilantro and lime wedges before serving.
