Ingredients

  • 2 lbs baby potatoes halved
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped (for garnish)

Instructions

Step 1: Preheat and Prep

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.

Step 2: Season the Potatoes

  • In a large mixing bowl, toss the halved baby potatoes with olive oil, garlic powder, onion powder, thyme, rosemary, paprika, salt, and pepper. Make sure every piece is evenly coated.

Step 3: Roast

  • Arrange the potatoes cut side down on the baking sheet in a single layer. This ensures maximum contact with the hot surface for that extra crispy finish.
  • Roast for 25–30 minutes, or until the cut sides are golden brown and crispy and the insides are fork-tender.

Step 4: Add Parmesan

  • Remove the potatoes from the oven and immediately sprinkle the grated Parmesan cheese over them while they’re still hot. The residual heat helps the cheese melt slightly and adhere to the potatoes.

Step 5: Garnish and Serve

  • Sprinkle with freshly chopped parsley for a pop of color and herbaceous flavor. Serve hot and enjoy!
