These golden-brown rounds are lightly breaded with a savory Parmesan mixture and air-fried or baked until they achieve a chip-like texture that rivals any traditional snack.

Ingredients

  • 2 medium Zucchinis sliced into thin rounds
  • ½ cup Grated Parmesan cheese
  • ¼ cup Panko breadcrumbs
  • 1 tsp Garlic powder
  • ½ tsp Smoked paprika
  • 1 tbsp Fresh parsley finely chopped
  • Olive oil spray or 1 egg white for coating
  • Salt and black pepper to taste

Instructions

  • Preheat your air fryer to 375°F (190°C) or oven to 400°F (200°C).
  • Slice zucchinis into thin, uniform rounds. Lightly salt them and let sit for 10 minutes, then pat completely dry with paper towels.
  • In a shallow bowl, whisk together Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper.
  • Lightly coat zucchini slices with olive oil spray or dip in egg white.
  • Press each slice into the breading mixture until evenly coated.
  • Arrange in a single layer in the air fryer basket or on a parchment-lined baking sheet.
  • Air fry for 8–10 minutes (or bake for 15–20 minutes), flipping halfway through, until golden brown and crispy.
  • Garnish with fresh parsley and serve immediately.
