Easy Crockpot Sausage Casserole with potatoes, veggies, and rich tomato broth.

Ingredients

  • 1 lb smoked sausage sliced into rounds
  • 4 medium potatoes diced (or substitute baby potatoes)
  • 1 onion chopped
  • 1 bell pepper any color, chopped
  • 1 can 14.5 oz diced tomatoes
  • 2 cups chicken broth
  • 1 tsp paprika
  • Salt and pepper to taste optional

Instructions

Step 1: Prep Your Ingredients

  • Wash and dice the potatoes into bite-sized chunks. Chop the onion and bell pepper, and slice the smoked sausage into thick rounds.

Step 2: Load the Crockpot

  • Add the sausage, potatoes, chopped vegetables, diced tomatoes (with juices), chicken broth, and paprika to your crockpot. Give everything a gentle stir to combine.

Step 3: Let It Cook

  • Cover and cook on low for 5–6 hours, or until the potatoes are fork-tender and the flavors have melded together into a rich, savory broth.

Note: Cooking times may vary slightly depending on the size of your potato chunks and the power of your slow cooker.

    Step 4: Serve and Enjoy

    • Give the casserole a good stir before serving. Taste and season with salt and pepper if needed. Ladle into bowls and serve warm with crusty bread or a green salad.
