Ingredients

  • 1 lb ground beef
  • 2 tablespoons taco seasoning
  • 1/4 cup water
  • 1 large head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup shredded cheddar cheese
  • 1/2 cup red onion thinly sliced
  • 1 cup canned corn drained (optional)
  • 1 cup canned black beans rinsed and drained (optional)
  • 1 cup Nacho Cheese Doritos crushed (or more to taste)
  • 1/2 cup Catalina dressing
  • 1/4 cup sour cream or ranch dressing

Instructions

Cook the Beef – In a large skillet over medium heat, cook ground beef until browned, breaking it into crumbles. Drain excess grease, add taco seasoning and water, then simmer for 3 minutes. Remove from heat and let cool slightly.

Prepare the Vegetables – Chop the romaine lettuce, halve cherry tomatoes, and thinly slice red onion. Rinse and drain corn and black beans if using.

Mix the Dressing – Whisk Catalina dressing with sour cream or ranch until smooth and creamy.

Assemble the Salad – In a large bowl, combine lettuce, cooked beef, tomatoes, onion, cheese, corn, and beans. Toss lightly.

Add Doritos & Dressing – Just before serving, sprinkle in crushed Doritos and drizzle the dressing over. Toss until evenly coated.

Serve Immediately – Enjoy fresh for the perfect combination of crunch, creaminess, and flavor.
