Ingredients

packet taco seasoning

10 oz can red enchilada sauce

16 oz can refried beans

15 oz can whole kernel corn, drained

4 oz can diced green chilies
8
large flour tortillas
cut in half
2
cups
shredded Fiesta blend cheese
or cheddar/jack combo
2
green onions
chopped (for garnish)
Optional: salsa
sour cream, extra chilies for serving
Instructions
Step 1: Prep the Filling
Preheat oven to 350°F (175°C).
In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
Stir in the taco seasoning, mixing well. Simmer for a couple of minutes.
Add the enchilada sauce, refried beans, corn, and green chilies. Stir until smooth and let it simmer for about 5 minutes.
Step 2: Assemble the Casserole
Grease a 9x13-inch baking dish.
Layer half the tortillas (cut in halves or quarters to cover the bottom).
Spread half of the beef mixture over the tortillas.
Sprinkle with half of the shredded cheese.
Repeat with another layer of tortillas, meat mixture, and top with the remaining cheese.
Step 3: Bake & Serve
Bake uncovered for 20 minutes, or until the cheese is melted and bubbly.
Remove from oven and garnish with chopped green onions.
Serve hot with salsa, sour cream, and extra green chilies on the side.
