Mini roast beef sliders baked with provolone and onions, served with au jus. A perfect party appetizer or quick dinner!

Ingredients

  • 3 tbsp unsalted butter for onions
  • 1 medium onion thinly sliced
  • 2 tsp fresh thyme minced
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 12 sweet rolls like King’s Hawaiian
  • 10 slices provolone cheese
  • 14 oz sliced deli roast beef
  • ½ cup unsalted butter melted (for topping)
  • tbsp dried onion soup mix
  • 1 packet au jus gravy mix
  • 3 cups water for au jus

Optional: fresh chopped parsley for garnish

Instructions

Step 1: Caramelize the Onions

  • In a large skillet over medium heat, melt 3 tbsp butter.
  • Add the sliced onions and cook, stirring occasionally, for 12–15 minutes, until soft and golden.
  • Add thyme, salt, and pepper. Stir to combine, remove from heat, and set aside.

Step 2: Prep the Rolls

  • Preheat oven to 350°F (175°C).
  • Without separating the rolls, slice them in half horizontally using a large knife.
  • Place the bottom half (cut side up) into an 11×7-inch baking dish.

Step 3: Assemble the Sliders

  • Layer half the provolone, all the roast beef, the caramelized onions, then the remaining cheese.
  • Place the top half of the rolls over the cheese.

Step 4: Make the Buttery Topping

  • Mix melted butter with dried onion soup mix.
  • Brush generously over the tops of the rolls (or pour if preferred).

Step 5: Bake

  • Cover loosely with foil (not touching the rolls).
  • Bake for 25 minutes, then uncover and bake another 5 minutes until golden brown.

Step 6: Make the Au Jus

  • While sliders bake, prepare au jus according to the packet instructions with 3 cups water.
  • Serve the sliders warm with au jus for dipping and optional chopped parsley on top.
