For the Wontons:

For the Soup:

low-sodium chicken broth

garlic cloves

dark soy sauce

sesame oil

–3 green onions

baby bok choy
halved lengthwise
Instructions
Step 1: Prepare the Wontons
Mix the Filling: Combine chicken, vinegar, soy sauce, sesame oil, garlic, ginger, brown sugar, and green onions in a bowl. Stir until well blended.
Assemble Wontons:
Place wonton wrappers on a clean surface.
Add 1 teaspoon of filling in the center of each.
Moisten the edges with water and fold into a triangle, pressing out air.
Bring the side corners together and seal with a dab of water to create the classic wonton shape.
Let the wontons rest while preparing the broth.
Step 2: Make the Soup
Simmer the Broth: In a large pot, combine chicken broth, garlic, soy sauce, sesame oil, and green onions. Bring to a boil.
Add bok choy and simmer for 2–3 minutes.
Step 3: Cook the Wontons
In a separate pot, bring 4 quarts of water to a boil.
Gently add wontons, stirring to avoid sticking. Once they float, cook for 2 more minutes.
Drain and add to the hot broth.
