When the holiday rush is in full swing and your to-do list is a mile long, these Festive Christmas Chocolate Rice Krispie Balls are the ultimate sanity saver. There is something so incredibly nostalgic about a chocolate-covered crispy treat, but this version feels extra special for the season.

Ingredients

  • 4 cups crispy rice cereal
  • ½ cup creamy peanut butter or light corn syrup
  • cup granulated sugar
  • 2 cups semi-sweet chocolate chips or melting wafers
  • 1 tbsp coconut oil optional, for a shinier coating
  • Holiday sprinkles for garnish

Instructions

  • Line a large baking sheet with parchment paper or a silicone mat.
  • In a large pot, combine the sugar and syrup (or peanut butter) over medium heat until the sugar dissolves and the mixture begins to bubble slightly.
  • Remove from heat and immediately stir in the rice cereal until thoroughly coated.
  • Using a tablespoon or cookie scoop, portion the mixture and roll into 1-inch balls. Place on the prepared baking sheet.
  • In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
  • Using a fork, dip each cereal ball into the melted chocolate, allowing the excess to drip off.
  • Return the chocolate-covered balls to the parchment paper and immediately top with sprinkles.
  • Allow to set at room temperature for at least 30 minutes or refrigerate for 15 minutes until the chocolate is firm.
