Ingredients

  • 1 cup unsalted butter softened
  • ½ cup powdered sugar plus 1 cup for rolling
  • 1 tsp almond extract
  • 2 ¼ cups all-purpose flour
  • ¼ tsp salt
  • ¼ cup raspberry jam seedless preferred

Instructions

  • Preheat your oven to 325°F and line a baking sheet with parchment paper.
  • Cream butter and ½ cup powdered sugar until smooth. Stir in almond extract.
  • Gradually add flour and salt until a soft dough forms.
  • Scoop 1 tablespoon of dough, flatten, add ¼ tsp jam, and seal into a ball.
  • Bake for 12–15 minutes until set but not brown.
  • Roll warm cookies in powdered sugar. Let cool, then roll again.
