Ingredients

  • 8 slices brioche or challah bread
  • 4 oz cream cheese softened
  • 2 tbsp powdered sugar plus more for dusting
  • ½ cup fresh strawberries sliced
  • ¼ cup strawberry jam
  • 2 large eggs
  • 3 tbsp milk
  • 2 tbsp butter for frying

Instructions

Make the Cheesecake Filling

  • In a small bowl, mix the softened cream cheese and powdered sugar until smooth and fluffy.

Assemble the Sandwiches

  • Spread the cream cheese filling on one side of four bread slices.
  • Top with sliced strawberries and a spoonful of strawberry jam.
  • Close each with a second slice of bread to form four full sandwiches.

Prepare the Egg Dip

  • In a shallow bowl, whisk together the eggs and milk. Dip each sandwich into the egg mixture, coating both sides evenly like French toast.

Fry the Sandwiches

  • Heat a skillet over medium heat and melt 1 tbsp of butter. Place two sandwiches in the skillet at a time and cook for 2–3 minutes per side, or until golden brown. Repeat with remaining sandwiches, adding more butter as needed.

Serve Warm

  • Remove from the skillet and let them drain briefly on a paper towel. Dust generously with powdered sugar. Slice diagonally and serve immediately.
