Ingredients

  • ¼ cup ghee or butter divided
  • 1 tablespoon olive oil
  • 1 lb Yukon gold potatoes cut into ½-inch cubes
  • 3 garlic cloves minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt plus more to taste
  • ¼ teaspoon ground black pepper plus more to taste
  • lb sirloin steak cut into ½-inch cubes
  • Fresh chopped parsley for garnish optional

Instructions

Prep the Pan

  • Heat a large cast iron skillet over medium heat. Add 1 tablespoon olive oil and 2 tablespoons ghee or butter. Let it melt completely before adding the potatoes.

Cook the Potatoes

  • Add the cubed Yukon gold potatoes to the hot skillet. Sprinkle with garlic, thyme, oregano, salt, and pepper. Let them cook undisturbed for 2–3 minutes to get a golden crust.
  • Stir and continue cooking for 8–10 minutes, or until potatoes are fork-tender and golden brown. Stir every 1–2 minutes to prevent sticking.

Tip: If your potatoes are crowded in the pan, they’ll steam instead of crisp. Use a large skillet or cook in two batches if needed.

  • Once cooked, remove the potatoes and all the browned bits from the skillet and set aside.

Sear the Steak Bites

  • Raise the heat to medium-high. Add the remaining 2 tablespoons of ghee to the skillet.
  • Once hot, add the steak bites in a single layer. Season with a little more salt and pepper. Let them sear undisturbed for at least 2 minutes to get that golden crust.
  • Stir and cook another 1–2 minutes until all sides are browned. Be careful not to overcook—steak bites should stay tender and juicy.

Combine and Serve

  • Return the potatoes to the skillet. Stir everything together to coat in the garlic butter sauce. Adjust seasoning to taste.
  • Garnish with chopped parsley and serve hot.
