  • 35 to 40 saltine or butter crackers roughly crushed
  • 1 large tomato diced
  • 1/4 cup finely chopped scallions
  • 2 large hard-boiled eggs roughly chopped
  • 1 1/2 cups mayonnaise or substitute half with full-fat Greek yogurt
  • Kosher salt and freshly cracked black pepper to taste

Step 1: Prepare the Ingredients

  • Roughly crush your crackers into bite-sized pieces—not crumbs. The salad’s signature texture comes from those light, crispy chunks. Dice the tomato, finely chop the scallions, and roughly chop the hard-boiled eggs.
