Bright, colorful, and deliciously gooey, these monster cookies made with cake mix and candy eyeballs are the ultimate Halloween treat. Easy to make and fun for kids!

Ingredients

  • 1 box white cake mix
  • ½ cup butter softened
  • ½ tsp vanilla extract
  • 8 oz cream cheese softened
  • 1 egg
  • Powdered sugar for coating
  • Food coloring neon works best for vibrant color
  • Candy eyeballs

Instructions

  • In a large bowl, beat together softened butter, vanilla, egg, and cream cheese until light and fluffy.
  • Add the cake mix and mix until well combined.
  • Divide dough into separate bowls (depending on how many colors you want).
  • Add food coloring to each bowl and stir until evenly colored.
  • Chill the colored dough for at least 30 minutes to firm up.
  • Preheat oven to 350°F (175°C).
  • Roll dough into 1-inch balls and coat in powdered sugar.
  • Place on a greased or lined cookie sheet and gently pat down.
  • Bake for 10–12 minutes or until just set. Do not overbake.
  • While cookies are still warm, press candy eyeballs onto the tops.
  • Let cool slightly and enjoy your spooky, gooey monsters!

Notes

Use neon food coloring for extra vibrant monsters.
Add eyeballs while cookies are warm so they stick well.
Chill dough to avoid overly sticky hands when rolling.
