This Green Olive Bean Salad is a vibrant, Mediterranean-inspired dish that is as nutritious as it is flavorful. Packed with plant-based protein and fiber, this salad features a hearty base of creamy white beans and chickpeas tossed with briny green olives and fresh herbs.

Ingredients

  • 1 can 15 oz chickpeas, rinsed and drained
  • 1 can 15 oz cannellini or Great Northern beans, rinsed and drained
  • 1 cup green olives pitted and sliced
  • ½ red onion finely diced
  • ½ cup fresh parsley chopped
  • ¼ cup fresh cilantro chopped
  • ¼ cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 clove garlic minced
  • Salt and black pepper to taste

Instructions

  • In a large bowl, combine the rinsed chickpeas, white beans, olives, red onion, and fresh herbs.
  • In a small jar, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
  • Pour the dressing over the bean mixture and toss well to coat.
  • Taste and adjust seasoning if needed.
  • Let sit for at least 30 minutes in the fridge before serving to allow flavors to develop.
