Make your own Taco Bell Grilled Cheese Burrito at home! This easy copycat recipe combines beef, rice, nacho cheese, and chipotle sauce in a crispy, cheesy tortilla. Ready in 25 minutes — perfect weeknight dinner idea!

Ingredients

For the Burrito Filling

  • 1 lb ground beef
  • 1 packet taco seasoning or homemade blend
  • 1 cup cooked white rice
  • ½ cup sour cream
  • ½ cup nacho cheese sauce
  • ¼ cup chipotle sauce or substitute with smoky mayo or spicy ranch
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas

For the Grilled Cheese Exterior

  • 1 cup shredded cheese cheddar or Mexican blend
  • Butter or oil for grilling
  • Optional Add-Ins: Black beans guacamole, jalapeños, or extra hot sauce for a spicier kick.

Instructions

Cook the Beef (8–10 minutes):

  • In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease. Add taco seasoning and ¼ cup water, then simmer for 5 minutes.

Warm the Tortillas:

  • Heat tortillas in a dry skillet or microwave for 20 seconds until soft and flexible.

Assemble the Burritos (5 minutes):

  • Lay a tortilla flat. In the center, add ¼ cup cooked rice, 2–3 tablespoons of seasoned beef, 1 tablespoon nacho cheese, a drizzle of chipotle sauce, and 1 tablespoon sour cream. Sprinkle with cheddar and mozzarella.

Roll the Burrito:

  • Fold in the sides and roll tightly from bottom to top to form a sealed burrito.

Grill with Cheese (3–4 minutes per side):

  • Heat a clean skillet over medium heat. Sprinkle 2 tablespoons of shredded cheese directly onto the skillet. Place the burrito seam-side down on top of the cheese. Press gently and cook until the cheese melts and crisps. Flip and repeat for the other side.

Serve and Enjoy:

  • Slice in half and serve immediately while warm and gooey.

Notes

For Extra Crispy Cheese: Don’t flip too early — let the cheese fully melt and form a crust before turning.
