Ingredients

For the Cookie Dough Balls:

  • cups almond flour
  • ¼ cup coconut sugar
  • ¼ cup coconut oil melted and cooled
  • 2 tablespoons milk of choice e.g., oat, almond
  • 1 teaspoon vanilla extract
  • 1 pinch sea salt
  • cup chocolate chips dairy-free, if vegan

For the Chocolate Coating:

  • 1 cup chocolate chips vegan if needed
  • 1 teaspoon coconut oil

Instructions

Prepare the Dough

  • Bring all ingredients to room temperature. In a mixing bowl, combine almond flour, coconut sugar, coconut oil, milk, vanilla, and salt. Mix until a soft dough forms.

Add Chocolate Chips

  • Fold in ⅓ cup of chocolate chips. Place the bowl in the freezer for 10 minutes to firm up the dough—this makes rolling much easier.

Shape the Balls

  • Remove the bowl from the freezer. Using a spoon or small scoop, roll dough into balls (about 1 heaping tablespoon each). Place them on a parchment-lined tray and freeze for at least 1 hour.

Melt the Chocolate

  • In a microwave-safe bowl, combine 1 cup of chocolate chips and 1 teaspoon of coconut oil. Heat in 30-second intervals, stirring between each, until smooth and fully melted.

Coat the Dough Balls

  • Dip each frozen dough ball into the melted chocolate, allowing excess to drip off. Return them to the lined tray. Sprinkle with a pinch of sea salt if desired.

Freeze to Set

  • Place the tray back in the freezer for 1–2 hours or until the chocolate has fully set. Store in an airtight container in the fridge or freezer.
