Ingredients

Cookie Dough Base

  • cups almond flour
  • ½ cup creamy almond butter
  • 1 teaspoon vanilla extract
  • ¼ cup maple syrup
  • 1 tablespoon coconut sugar
  • Pinch of salt
  • ½ cup chocolate chips

Chocolate Topping

  • 1 cup chocolate chips
  • 2 teaspoons coconut oil
  • Flaky sea salt optional, for topping

Instructions

Make the Cookie Dough Base

  • In a bowl, combine almond flour, almond butter, vanilla, maple syrup, coconut sugar, and a pinch of salt. Mix until smooth.
  • Fold in ½ cup chocolate chips and mix again.
  • Press the mixture firmly into a parchment-lined loaf pan to form an even base. Freeze while you prepare the topping.

Melt the Chocolate

  • In a microwave-safe bowl or over a double boiler, melt 1 cup chocolate chips with 2 teaspoons coconut oil until smooth.

Add the Chocolate Layer

  • Pour the melted chocolate mixture evenly over the cookie dough base. Use a spatula to smooth out the top.
  • Sprinkle with flaky sea salt, if using.

Freeze & Serve

  • Return the pan to the freezer and chill until the chocolate is set (about 30 minutes). Slice into 12 bars and enjoy!
