There is something truly special about the combination of a buttery, soft-baked cookie studded with rich chocolate and wrapped in a crunchy layer of toasted almond slices.

Ingredients

  • ½ cup salted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ cup semi-sweet chocolate chips
  • 1 cup sliced almonds
  • 2 tbsp powdered sugar for dusting

Instructions

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and sugar until light.
  • Beat in the egg and vanilla extract.
  • Gradually stir in the flour and baking soda until a soft dough forms.
  • Fold in the chocolate chips.
  • Scoop a tablespoon of dough and roll it into a ball.
  • Roll the ball in the sliced almonds, pressing them in firmly to cover the surface.
  • Place on the baking sheet about 2 inches apart.
  • Bake for 12–14 minutes, or until the almonds are golden.
  • Let cool on the pan for 5 minutes, then move to a wire rack.
  • Once mostly cool, dust generously with powdered sugar.
