When you are in the mood for a gourmet cafe experience at home, this Chicken Avocado Melt Sandwich is the ultimate soulful comfort food. This sandwich features layers of juicy, seasoned chicken breast, creamy smashed avocado, and a generous amount of melted, sharp cheddar cheese, all pressed between two slices of thick, buttery sourdough bread.

Ingredients

  • 2 thick slices of Sourdough bread
  • ½ cup Cooked chicken breast sliced or shredded
  • ½ ripe Avocado smashed
  • 2 slices or ½ cup shredded Sharp cheddar cheese
  • 1 tbsp Salted butter softened
  • 1 tsp Lime juice
  • Pinch of garlic powder salt, and black pepper

Instructions

  • In a small bowl, smash the avocado with lime juice, salt, and pepper.
  • Butter one side of each bread slice generously.
  • On the non-buttered side of one slice, spread the avocado mixture.
  • Top with the chicken and sprinkle with a pinch of garlic powder.
  • Add the cheese and top with the second slice of bread, buttered side facing out.
  • Heat a skillet over medium heat. Place the sandwich in the pan and cook for 3 minutes per side.
  • Press down with a spatula occasionally until the bread is golden brown and the cheese is fully melted.
  • Slice and serve warm.
