Homemade Chocolate Rice Krispie Balls

When the holiday season kicks in, there is nothing quite like the smell of melting chocolate and toasted rice cereal filling the house. These Christmas Chocolate Rice Krispie Balls are my go-to when I need a festive treat that looks impressive but doesn't require me to spend all day leaning over a hot stove.

Ingredients

  • 4 cups Rice Krispie cereal
  • ½ cup Creamy peanut butter or melted marshmallows
  • cup Honey or maple syrup
  • 12 oz Milk chocolate chips
  • 1 tsp Coconut oil optional, for shine
  • Pinch of sea salt

Instructions

  • In a large microwave-safe bowl, combine the peanut butter and honey. Heat for 45 seconds and stir until smooth.
  • Gently fold in the Rice Krispie cereal until completely coated.
  • Using a tablespoon or small scoop, roll the mixture into 1-inch balls, pressing firmly to ensure they hold their shape.
  • Place the balls on a tray lined with parchment paper and chill in the fridge for 15 minutes.
  • Melt the chocolate chips and coconut oil together in the microwave, stirring every 30 seconds until silky.
  • Using a fork, dip each chilled ball into the chocolate, letting the excess drip off.
  • Return the balls to the parchment paper and sprinkle with sea salt if desired.
  • Refrigerate for at least 30 minutes until the chocolate shell is completely firm.
