This Best Ever Chicken Soup is the ultimate remedy for a long day or a chilly afternoon. It starts with a base of aromatic vegetables—onions, celery, and carrots—that simmer together to create a deeply restorative broth.

Ingredients

  • 1.5 lbs boneless chicken breasts or thighs
  • 2 tbsp olive oil or butter
  • 1 large yellow onion diced
  • 3 medium carrots sliced
  • 3 stalks celery sliced
  • 6 cups high-quality chicken broth
  • 2 medium potatoes cubed
  • ½ tsp dried thyme
  • ¼ cup fresh parsley chopped
  • Salt and black pepper to taste

Instructions

  • Heat oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5–7 minutes until slightly softened.
  • Add chicken breasts, thyme, and broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Remove chicken to a plate and shred with two forks.
  • Add the cubed potatoes to the pot and simmer for another 10 minutes until tender.
  • Return the shredded chicken to the pot and stir in the fresh parsley.
  • Season with salt and pepper. Serve warm with crusty bread.
