This Impressive Cranberry Brie Stuffed Chicken is a show-stopping main course that perfectly balances sweet, tart, and savory flavors. Ideal for holiday gatherings or a sophisticated Sunday dinner, this dish features tender chicken breasts filled with melted, creamy brie and a vibrant cranberry reduction.

Ingredients

  • 4 large boneless skinless chicken breasts
  • 4-6 oz Brie cheese sliced
  • ½ cup whole berry cranberry sauce
  • 1 cup fresh baby spinach
  • ½ cup Panko breadcrumbs
  • 2 tbsp melted butter
  • 1 tsp fresh rosemary minced
  • Salt and black pepper to taste

Instructions

  • Preheat your oven to 200°C.
  • Cut a pocket into the side of each chicken breast. Season inside and out with salt and pepper.
  • Stuff each breast with a few spinach leaves, a slice of brie, and a spoonful of cranberry sauce. Secure with toothpicks.
  • In a small bowl, mix breadcrumbs, melted butter, and rosemary. Press the mixture onto the top of each chicken breast.
  • In an oven-safe skillet, sear the bottom of the chicken over medium-high heat for 3 minutes.
  • Transfer the skillet to the oven and bake for 20–25 minutes until the internal temperature reaches 74°C.
  • Let the chicken rest for 5 minutes, remove toothpicks, and serve drizzled with any remaining pan juices.
