When mornings are a whirlwind but you still want a hearty, satisfying start to the day, these English Muffin Breakfast Pizzas are the perfect solution. The aroma of toasted muffins, savory sausage, and smoky bacon mingling with melting cheese is enough to pull even the deepest sleepers out of bed.

Ingredients

  • 4 English muffins split in half
  • 4-8 large Eggs whole or scrambled
  • ½ cup Cooked breakfast sausage crumbled
  • 4 strips Cooked bacon chopped
  • 1 ½ cups Shredded cheddar or mozzarella cheese
  • ¼ cup Butter softened
  • Salt and black pepper to taste
  • Fresh chives or parsley for garnish

Instructions

  • Preheat your broiler to high and line a rimmed baking sheet with parchment paper.
  • Spread a thin layer of butter on the cut side of each English muffin half. Place them on the baking sheet and broil for 1–2 minutes until lightly golden.
  • Remove the pan from the oven. Sprinkle a small amount of cheese on each muffin, followed by the cooked sausage and bacon.
  • If using whole eggs, create a small nest in the toppings and carefully crack one egg onto each muffin half. If using scrambled, spoon them over the cheese and meat.
  • Top with the remaining cheese and a pinch of salt and pepper.
  • Return to the broiler for 4–5 minutes, or until the egg whites are set and the cheese is melted and bubbly.
  • Garnish with fresh herbs and serve immediately.
