Ingredients

  • 3 ripe bananas mashed
  • ½ cup crushed pineapple with juice
  • ½ cup shredded coconut
  • ½ cup chopped macadamia nuts
  • ½ cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup granulated sugar

Instructions

  • Preheat your oven to 350°F and grease a 9x5-inch loaf pan.
  • In a large bowl, mash the bananas. Add the eggs, oil, vanilla, and crushed pineapple. Whisk until well combined.
  • In a medium bowl, whisk together the flour, sugar, baking soda, and salt.
  • Gently fold the dry ingredients into the wet banana mixture until just combined.
  • Fold in the shredded coconut and chopped macadamia nuts.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
