When life gets busy and the family is craving something truly substantial, this Hobo Casserole is the ultimate ace up your sleeve. This dish is the epitome of rustic comfort, layering savory seasoned ground beef with tender sliced potatoes and a blanket of molten cheddar cheese. As it bakes, the juices from the meat meld with the potatoes, creating a flavor that is deep, nostalgic, and incredibly satisfying.

Ingredients

  • 1.5 lbs Ground beef
  • 4-5 Medium Russet potatoes peeled and thinly sliced
  • 1 Large yellow onion diced
  • 2 cloves Garlic minced
  • 1 can 10.5 oz Cream of mushroom soup
  • ¼ cup Milk
  • 2 cups Sharp cheddar cheese shredded
  • 1 tsp Garlic powder
  • ½ tsp Salt
  • ½ tsp Black pepper
  • Fresh parsley chopped (for garnish)

Instructions

  • Brown: Preheat your oven to 375°F. In a large skillet over medium-high heat, brown the ground beef with the diced onion and garlic until the meat is fully cooked. Drain any excess fat.
  • Mix: Stir the cream of mushroom soup, milk, garlic powder, salt, and pepper into the beef mixture until well combined.
  • Layer: In a greased 9x13 inch baking dish, place half of the sliced potatoes in an even layer. Spread half of the beef mixture over the potatoes. Repeat with the remaining potatoes and beef mixture.
  • Bake: Cover the dish tightly with aluminum foil. Bake for 40 minutes.
  • Melt: Remove the foil and sprinkle the shredded cheddar cheese evenly over the top.
  • Finish: Bake uncovered for an additional 10–13 minutes, or until the cheese is melted and bubbling and the potatoes are tender.
  • Serve: Garnish with fresh parsley and let rest for 5 minutes before serving.
