Seared to a perfect golden brown and finished in a rich, citrus-infused pan sauce, these Lemon Garlic Butter Chicken Thighs with Green Beans are the ultimate low-carb dinner hero. There is a deep, rustic comfort in watching the garlic and butter bubble around the chicken, creating a savory lacquer that makes every bite incredibly succulent.

Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • 1 lb fresh green beans trimmed
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • ¼ cup chicken broth
  • 1 fresh lemon juiced and zested
  • ½ tsp red pepper flakes
  • Salt and black pepper to taste
  • Fresh parsley chopped for garnish

Instructions

  • Sear: Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear for 5–6 minutes per side until golden and cooked through.
  • Vegetables: Move chicken to one side of the pan. Add the green beans and sauté for 3–4 minutes until tender-crisp.
  • Aromatics: Add the butter to the center of the pan. Once melted, stir in the garlic and red pepper flakes, cooking for 1 minute until fragrant.
  • Sauce: Pour in the chicken broth, lemon juice, and lemon zest. Use a spoon to scrape up the browned bits from the pan.
  • Combine: Toss the chicken and beans in the sauce for 1–2 minutes until everything is well-coated and the sauce has slightly reduced.
  • Serve: Garnish with fresh parsley and extra lemon slices. Serve immediately while hot.
